Vegetarianism and an advanced vegan diet are mostly types of nutrition based on a philosophical background. In terms of the medical aspect of the subject, a problem series starting from cow's milk supports these types of nutrition. The dairy industry did not like it when it was understood that cow milk was not compatible for humans and increased acidification instead of giving calcium. When the issue of box milk was not milk and no food was spread to the general, daily pasteurized milk started to be sold.
On the other hand, plants are the most suitable nutrient source for human beings, as it grabs photons from the sun and turn them into tissue and bacteria play a role in plant metabolism, and digestive enzymes come with the plant. Since animals turn the plant back into tissue, when we eat meat, we run a huge endocrine system to generate energy from it, and intensify mechanical digestion in the stomach. So we spend energy on it to get energy from meat.
Even if the person does not consume any meat in the short term, s/he does not have a serious problem if s/he does not have a chronic problem. However, it is highly likely that it will face the risks mentioned in the long term. The reason why diseases are stacked statistically at late ages is the capacity of biology to tolerate.
